Just a few extra steps

Some people love to cook.

I do not love to cook.

But I love to eat, so I cook.

Cooking here often involves a few extra steps. For example, while on our unexpected time in the US we discovered an amazing quinoa taco recipe. It’s a crock-pot dump recipe so it’s super-easy. All you need are black beans, corn, diced tomatoes, enchilada sauce, quinoa, taco seasoning, and broth. (recipe here) It has become one of our favorite meals ever.

We can always find quinoa and broth. Lately, we can usually find canned black beans and corn. Diced tomatoes and taco seasoning are rare and I’ve never seen enchilada sauce.

A few weeks ago I found diced tomatoes AND taco seasoning (yay!) so all I needed to make the recipe was enchilada sauce.

So I learned how to make enchilada sauce (recipe here). I am learning so many things.

The first time I tried to make it I realized I didn’t have all the ingredients so I had to go back to the store to get some white wine vinegar. Because all of the vinegar is imported, I have to use Google translate to help me read both Korean and Russian labels to find the right type of vinegar. Also, I don’t have onion powder and can’t find any locally so I just chopped up an onion. That’s about the same, right? I honestly don’t know but it seemed okay.

Because of this recipe, I also ran out of chili powder; I’m sure I can find some somewhere but I have no idea where. This is an important ingredient for homemade taco seasoning so I need to find it sooner rather than later as we have regular meat tacos nearly every Tuesday and LeYanna LOVES Taco Tuesday.

Sometimes we can find tortillas…but they’re not very good. This week we couldn’t find them at all. So we also learned how to make tortillas from scratch (recipe here). It turns out that homemade tortillas are AMAZING. We added a tortilla press to our Amazon shopping list so the next person who comes here from the US and asks, “Can I bring anything?” will have a long list of things, including a tortilla press, to bring.

So instead of dump and slow-cook, we had to make enchilada sauce from scratch, make tortillas from scratch, dump and cook.

It’s more of a commitment.

But, oh my goodness, it was so worth it today! We have very happy stomachs.
